A simple breakfast or brunch dish with an elegant name, this is one that takes little in the way of ingredients, time or skill. Yet the results are perfect for that lazy a Sunday morning.
Remember as with any egg recipe try and use free range or a least free run organic eggs whenever you can, and not just for taste and nutrition but because it is the right thing to do. Battery raised eggs are just un-ethical. True they cost more but not that much. Maybe you just use a few less eggs, no? good for the palate and the soul, as all good food should be.
EGGS SUR LE PLAT.
- 6 eggs.
- 1 table-spoonful of butter or nice dripping.
- Pepper and salt to taste.
Melt the butter in a small shallow baking-dish, or ramkins. Break the eggs carefully into this; dust lightly with pepper and salt, and put in a moderate oven until the whites are well “set.”
Serve in the dish in which they were baked.
That’s it, nothing to it. These are not ‘shirred’ eggs but close enough. Keep em simple, Enjoy.
